Roasted Broccoli
1-2 bunches of fresh broccoli
Oil (olive or canola)
Salt and pepper to taste
Wash broccoli. Cut into bite size pieces and layer in a single layer on a cookie sheet that has sides.
Drizzle oil (I used 1/4 cup for 2 heads of broccoli but you can use a little more or less as you wish)
Sprinkle with salt and pepper or any other seasonings.
Bake at 350 degrees for approximately 30 minutes.
After 15 minutes, I take mine out of the oven and stir it.
Return to oven and bake until broccoli is tender or it is beginning to get crispy or brown.
It depends how you prefer your finished product. I like when it begins to get a little charred/brown. If you don't like that flavor, remove from oven when the fork you poke a large piece of broccoli with goes into the broccoli without a problem.
You may need to adjust baking times to suit your preference.
