Pumpkin Chocolate Chip Cookies
Ingredients
1 - 15 ounce can pure pumpkin (2 cups mashed pumpkin)
2 cups sugar
1 cup oil (canola, vegetable)
2 eggs
4 cups flour
2 tsp. cinnamon
4 tsp. baking powder
1 tsp. salt
2 tsp. baking soda
2 tsp. milk
2 cups chocolate chips
2 tsp. vanilla
Here's what you do:
Combine pumpkin, sugar, oil, eggs and mix well. Dissolve baking soda in 2 tsp. milk and add and mix well. Next, add flour, cinnamon, baking powder and salt. Mix well. Fold in chocolate chips.
Bake at 350 degrees for 10 minutes or until they spring back when you touch the center gently with your finger. If your finger leaves an indentation in the center of the cookie, allow to bake another 2 minutes or until it springs back when you touch it.
You can spread these cookies with icing and put two together for a sandwich cookie (known in Lancaster County as a Whoopie Pie 😁.
