Cheesy Potato Soup

Ingredients

3 carrots
1 small onion
2 stalks of celery
4 potatoes
1 can chicken broth

3 tbsp. butter
3 tbsp. flour
1 cup milk
8 oz. Velveeta or cheddar cheese, cubed


Dice vegetables and simmer in broth until tender.  Melt butter in sauce pan. Mix flour and milk together and add to butter. Continue to heat and stir until it becomes a thick sauce. Fold in cubed cheese. Stir until cheese is melted. Add cheese sauce to vegetables and broth.
