Baked Potatoes
Ingredients:
6-12 potatoes (Russett works well for baked potatoes)
Oven Baked
Wash and scrub dirt from potatoes. Rub lightly with oil. Place in a 9 x 13 inch pan and poke each potato with a fork a few times. Bake at 350 degrees for 1 hour. Most smaller potatoes with be soft in 1 hour but larger potatoes may need extra time. Continue to bake 15+ minutes until tender.
Alternate: Wash and scrub dirt from potatoes. Wrap each potato in tin foil. Place on oven racks and bake as directed above.

Have you heard of an Instant Pot? It is simply an electric pressure cooker. I never owned a pressure canner and was always afraid to use one. That has all changed with my purchase of my Instant Pot.

If you don't have one, don't worry - continue on as usual. You may want to do some research into Instant Pots because they are a unique and helpful tool in my kitchen! And I haven't even begun to touch the surface of what I can do with it.
How I made baked potatoes in my Instant Pot:
Add 1 cup water in the bottom of Instant Pot. Put liner in the bottom. Not sure what its called but it keeps the potatoes from touching the bottom of the pot. Layer potatoes on top of the trivet/liner. I made 12 medium to large sized potatoes.
Set to Manual - decrease time to 14 minutes. Seal valve and start Instant Pot.
Allow to release steam after it beeps that it is done. I always lay a dish towel over the top to avoid spatters from the vent.
